"Vindicator" with Lapis Lazuli Gemstone handle |
An elegant and tasteful set, this Chef's set is custom made for the kitchen. The blades are all 440C high chromium martensitic stainless steel, chosen for high wear resistance and a great reputation. The blades are all hollow ground and mirror polished for high corrosion resistance and easy cleaning. The blade tempers vary to their use; the thin and springy boning knife is less hard and more tough, the thicker La Cocina is harder and less tough. All of the blades have matching full filework and fully tapered tangs. The bolsters are all 304 austenitic high nickel, high chromium stainless steel for the ultimate in toughness and corrosion resistance. They are all dovetailed and bed scales of rich Larvikite with is a syenite containing large crystals of anthorclase which display a beautiful blue-gray schiller and iridescence. Thus the alternate name: Blue Pearl Granite. This rock was intruded during the Carboniferous period, so is about 300 million years old. It is very tough and durable, taking and keeping a great polish. The knives are my Vega master chef's knife, my French Chef Sabatier, my serrated Bread knife, the La Cocina fruit and utility knife, my Boning knife, and Paring knife.
The block for this ensemble is extremely strong and durable. I made it from Pecan hardwood, one of the hardest and toughest woods known, a close relative of Hickory, with American Black Walnut spacers. The block has dedicated spaces for all six knives, and is fashioned in a stair-step radial shape for a tasteful display. The woods are oiled and waxed for longevity, and the flat faces of the block are capped with ground, lapped, and polished panels of Larvikite to match the handles.
A beautiful and useful custom set for the master's kitchen.
